- 2 Tbsps olive oil
- 8 chicken joint (breasts, legs)
- 3 ½ ozs Pancetta (diced)
- 2 onions (chopped)
- 4 ozs Mushrooms (coarsely chopped)
- 28 ozs canned Plum tomato
- 2 Tbsps Red wine vinegar
- 1 Tbsp sugar
- 2 cups chicken stock
- salt
- peppers
- To garnish
- 1 Tbsp chopped parsley

Preparation steps
1.
Heat the oil in a large pan. Brown the chicken, a few pieces at a time, until lightly browned. Remove from the pan and set aside.
2.
Reduce the heat and add the pancetta. Cook gently to allow the fat to melt and cook until just crisp. Remove and set aside.
3.
Add the onions and mushrooms to the pan and cook for 5-10 minutes until the onions have softened and the mushrooms are lightly browned.
4.
Add the chicken, pancetta, tomatoes, vinegar, sugar and stock to the pan and season to taste.
5.
Bring to a simmer, cover and cook for 40-50 minutes until the chicken is tender.
6.
Put into serving bowls and scatter over the parsley.
