¼ cup olive oil
7 ozs onions (finely chopped)
2 red Bell pepper (seeds removed, chopped)
1 clove garlic cloves (finely chopped)
1 ½ tsps salt
26 ozs lean stewing Beef (cubed)
¼ cup gluten-free all purpose flour
1 pinch Caraway
1 ½ Tbsps paprika
Beef stock
5 ozs Tomatoes (quartered)
To serve
Mashed potatoes

Preparation steps

1.
Heat the oven to 150°C (130° fan) 300°F gas 2.
2.
Heat the oil in a flameproof casserole dish and cook the onions, peppers, garlic and salt for 5 minutes until softened. Remove from the dish and set aside.

Toss the beef in the flour to coat and add to the dish in batches. Brown on all sides.
4.
Add the onions, peppers and garlic to the dish with the caraway seeds and paprika. Add just enough stock to cover the contents of the dish. Cover and cook for 2 hours.
5.
Add the tomatoes to the dish and cook for a further 20-30 minutes until the meat is tender. Serve with mashed potatoes.
