6 large red chili peppers (mild)
3 small Thai chili (spicy)
2 shallots
1 garlic clove
1 sprig Lemongrass
1 tsp Cumin
1 tsp Coriander
1 organic Kaffir lime juice
1 inch fresh Galangal root (or ginger root)
5 tsps Coriander
2 tsps Shrimp paste
salt
freshly ground peppers

Preparation steps

Rinse and halve the chili peppers and thai chilis. Remove the seeds and the membranes from both.

Finely dice both both chilis. Peel and finely dice the garlic and shallots.

Remove the white and light green parts from the lemon grass.

Separately toast the cumin and coriander seeds in a small pan until fragrant. Finely grind the spices in a mortar. Rinse the kaffir lime in hot water, and finely grate the zest. Add the zest to the spices. Rinse and finely dice the galangal and coriander root.

Add all the prepared ingredients to a mortar, and grind into a fine paste. Add the shrimp paste, and mix until combined. Season to taste with salt and pepper.
