- ½ cup caster sugar
- 1 egg
- 1 egg yolk
- 1 tsp vanilla extract
- 1 ½ cups self-rising flour
- 3 ozs Dark chocolate (cut into small chunks)

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.
2.
Beat the butter and sugar in a mixing bowl until soft and creamy.
3.
Add the sugar, egg, yolk, vanilla and flour and stir well until blended.
4.
Place small heaps of the mixture onto the baking trays, spacing them slightly apart to allow them to spread. Press the chocolate chunks onto the heaps and press down gently.
5.
Bake for 10-15 minutes until golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
