Cook the rice in 800 ml of boiling, salted water until tender. Drain if necessary.
Fry the meat in a hot pan for 2 min on each side. Add the garlic and the rosemary sprig. Season with salt, ground black pepper and lemon zest and remove the meat from the pan.
Season the rice with lemon juice and arrange on preheated plates. Place the chops on top of the rice and serve garnished with rosemary tips and mint leaves.
