- 2 bunches parsley
- 1 bunch scallions
- 2 Tbsps butter
- 2 Tbsps Pastry flour
- 1 l Chicken broth
- 2 Tbsps Crème fraiche
- salt
- freshly ground peppers
- 4 eggs

Preparation steps
1.
Rinse parsley, shake dry, pluck off leaves and chop finely. Rinse, dry and chop scallions.
2.
Heat butter in a saucepan and saute scallions. Add parsley and saute briefly. Add flour, saute briefly, stirring, and add broth. Bring soup to a boil, reduce heat and simmer for about 10 minutes. Add creme fraiche and season with salt and pepper.
3.
Cook eggs until semi-soft, rinse with cold water and peel. Halve eggs.
4.
Pour soup into bowls and top with egg halves. Serve.
