For the eggs
6 eggs
1 Tbsp Mayonnaise
1 Tbsp Crème fraiche
½ tsp spicy Mustard
2 Tbsps mixed, chopped Fresh herbs (such as chives, parsley, chervil)
salt
cayenne pepper
For the garnishing
mixed, chopped Fresh herbs (to taste)
Beet Greens

Preparation steps

Hard boil eggs, drain, peel and halve lengthwise. Carefully remove yolks and place into a bowl. Add mayonnaise, crème fraîche and mustard to the yolks and mix well. Add chopped herbs and season with salt and cayenne pepper. Stuff egg whites with the mixture (with a spoon or using a pastry bag).

Garnish with mixed herbs and beetroot leaves. Serve.
