- For the eggs
- 6 eggs
- 1 Tbsp Mayonnaise
- 1 Tbsp Crème fraiche
- ½ tsp spicy Mustard
- 2 Tbsps mixed, chopped Fresh herbs (such as chives, parsley, chervil)
- salt
- cayenne pepper
- For the garnishing
- mixed, chopped Fresh herbs (to taste)
- Beet Greens

Preparation steps
1.
Hard boil eggs, drain, peel and halve lengthwise. Carefully remove yolks and place into a bowl. Add mayonnaise, crème fraîche and mustard to the yolks and mix well. Add chopped herbs and season with salt and cayenne pepper. Stuff egg whites with the mixture (with a spoon or using a pastry bag).
2.
Garnish with mixed herbs and beetroot leaves. Serve.
