1 stalk Leeks
2 onions
220 grams Dried meat (smoked bacon)
3 Tbsps vegetable oil
2 eggs
salt

Preparation steps

Peel the potatoes, grate finely and squeeze in a kitchen towel, so that the potatoes get dry. Rinse, trim and cut the leeks into thin rings. Peel the onions and chop finely. Cut the dried meat into small cubes.

Heat 1 tablespoon oil in a pan and saute the leeks, onions and the dried meat in it for 3-4 minutes. Take out the dried meat mixture from the pan and place in a bowl. Mix the potatoes and eggs together, add to the dried meat mixture, and mix the ingredients together loosely. Season with salt, pepper and nutmeg.

Heat the remaining heat oil in a pan and fry the dried meat and potato mixture in it. Roast for 40 minutes at medium heat, turning constantly, so that it is nice and crispy. Mix in the parsley at the end and serve with apple sauce.
