- 250 grams Crème fraiche
- 4 sheets white gelatin
- 250 grams cooked ham (lean)
- 1 Tbsp parsley (finely chopped)
- 2 tsps Mustard
- salt
- freshly ground peppers
- 2 tsps Horseradish (freshly grated)
- 150 grams Whipped cream
- toasted white bread

Preparation steps
1.
Soak the gelatin in cold water until softened, about 10 mintes. Beat the creme fraiche until smooth.
2.
Dissolve the soaked gelatin in a small saucepan over low heat and thoroughly mix with the cream fraiche.
3.
Mix together the finely chopped ham, parsley and spices. Season to taste with salt and pepper.
4.
Beat the heavy cream until stiff peaks form and gently into the creme fraiche. Chill in the refrigerator for about 3 hours.
5.
Serve the ham mousse using two spoons to form a quenelle and place on top of the toasted bread. Serve immediately.
