200 milliliters dry white wine
400 milliliters Beef broth
4 small Apple
200 grams Broad bean
500 grams small, new potatoes
500 grams Smoked pork chop (Ham or shoulder)
150 grams Prune
1 bay leaf
1 sprig rosemary
salt

2 Tbsps finely chopped parsley

Preparation steps

Peel the shallots, garlic and carrots. Cut the garlic and the carrots in half. Cook all together in a pan in hot oil for 3-4 minutes until translucent. Add the wine, pour in some broth and bring to boil. Rinse the apples and cut out the cores. Rinse the beans and drain. Rinse the potatoes and cut smaller if necessary. Cut the meat into bite-size pieces.

Place the apples with the beans, the potatoes, the meat, the plums, the bay leaf and rosemary in the pot. Season with salt and pepper, and pour broth until all ingredients are not yet completely covered. Cover and simmer gently about 1.5 hours on low heat. Pour in broth as needed. Before serving, mix in the parsley and season. Pour into a large serving bowl.
