4 slices Beef fillet (about 100 grams)

Preparation steps

Trim the mushrooms and cut into slices. Finely dice the ham.

Peel the onion and chop finely. Heat olive oil in an oven-proof pan and fry the onions until translucent. Add the ham and mushrooms, and season with salt and pepper. Once the liquid has evaporated, stir in the parsley and red wine.

Season the beef fillets with pepper and lemon, place it over the mushrooms and ham in the pan, and drizzle with olive oil. Roast in a preheated oven at 175°C (fan: 155°C, gas mark 2) (approximately 350°F) for about 8-12 minutes, depending on your preference and thickness of fillet. Turn the fillet twice in between the roasting, season with salt and baste with the gravy.

Serve the beef fillets in the pan.
