Ham Wrapped Filet Mignon with Bean and Pear Salad
Ingredients
- For the beef medallions
- 4 slices raw smoked ham
- 12 Sage
- 4 Beef fillet (each around 220-250 grams) (approximately 5 ounces)
- 3 Tbsps clarified butter

- 100 grams Leaf lettuce variety
- 100 grams yellow Beans
- 100 grams green Beans
- 2 small Pear
Preparation steps
Arrange the ham on a clean work surface. Top each with 3 sage leaves. Wrap each piece of ham around 1 beef medallion, securing with butcher’s twine.

Sear the beef in hot butter in a grill pan for 2 minutes per side. Wrap in foil and bake for 15-20 minutes.
Meanwhile, for the salad: Rinse the lettuce and shake dry. Rinse the beans, cook in boiling salted water for 8-12 minutes, drain then rinse under cold water until cool. Rinse the pears, quarter, core and halve each quarter again. Toss the lettuce, beans and pears together and distribute between 4 serving plates. For the dressing: Whisk all ingredients together. Remove the beef from the oven, add to the salad and sprinkle with salt and pepper. Serve garnished with sage.
