4 beef tenderloin (1 1/2 inches thick; 175 g | 6 oz each)
4 slices Bacon

Preparation steps

Adjust oven rack to middle position; place rimmed baking sheet on oven rack, and heat to 450 degrees F.

Combine vegetables and olive oil in a mixing bowl. Toss to coat. Season with pepper and paprika.

Rub each side of the tenderloins with olive oil and generously season with salt and pepper. Wrap 1 slice bacon around each filet, and secure to meat with a toothpick. Place filets in a heated cast iron pan or nonstick 10-inch skillet and cook without moving until well-browned, about 3 minutes. Turn filets using tongs and cook again until well-browned, 3 minutes longer. Using tongs crisp the bacon slightly by holding filets on their sides briefly. Transfer steaks to the hot baking sheet in the oven. Top filets with vegetable mixture and Gruyere cheese.

Roast until preferred done. 4 to 6 minutes for rare, 6 to 8 minutes for medium-rare, or 8 to 10 minutes for medium. Use an instant-read thermometer to check internal temperature.

Transfer tenderloins to a serving dish; loosely tent with foil, and let rest for 5 minutes. Serve.
