- 1 boned ham joint (approx. 1 kg with skin)
- 1 onion (roughly chopped)
- 1 carrot (roughly chopped)
- 2 bay leaves
- 3 Tbsps vegetable oil
- 4 Tbsps honey
- 2 tsps paprika
- 2 cups Pistachio
- fresh Fresh herbs (to garnish)

Preparation steps

Put the ham joint in a large pan of water and bring to a boil. Pour the water away, refill with fresh water and put in the onion, carrot and bay leaves. Bring to a boil and simmer for 40 minutes.

Heat the oven to 200ºC (180º fan) 400ºF, gas 6.

Remove the cooked ham from the pan, cut away and discard the skin and fat and pat the meat dry with kitchen paper.

Heat the oil with the honey and paprika in a small pan, season with salt and pepper and brush all over the meat.

Chop 1 cup of pistachios very finely until they resemble breadcrumbs. Chop the other cup of pistachios very coarsely.
6.
Brush the ham with the oil and honey mix once more then sprinkle the finely chopped pistachios over, pressing so they stick to the meat.
7.
Put the meat in a roasting pan, sprinkle over the coarsely chopped pistachios and roast in the oven for 20 minutes. Serve garnished with fresh herbs.
