Ham and String Beans
Blanch the beans in a salted boiling water for 4 minutes, until tender, but still crisp. Drain and rinse in cold water and drain again.
Put the pancetta in a frying pan and cook until crisp. Remove the pancetta, break into pieces and set aside.
Add the shallots to the pan and cook until soft.
Add the butter to the pan and when melted add the drained green beans and pancetta. Season to taste with salt and pepper. Stir constantly until the beans are hot. Serve immediately.
