120 grams Mayonnaise
½ organic lemon (zested and juiced)
60 grams Corn
1 small carrot
2 Tomatoes
4 slices cooked ham
salt
freshly ground peppers
8 slices Whole Wheat Bread

Preparation steps

1.

Mix the mayonnaise with the lemon juice and lemon zest. Strain the corn. Peel the carrot and finely grate. Rinse the tomatoes, hull, cut into quarters, remove the seeds and cut into small cubes. Cut the ham into cubes. Combine the corn, carrots, tomatoes and ham. Season with a little salt and pepper.

Spread the mayonnaise over the bread, top with the ham and corn mixture then fold the bread slices in half.

Wrap in napkins and enjoy as a snack.
