Ham and Cheese Fritatta
Preheat the grill to hot. Melt a quarter of the butter in a large omelette pan set over a medium heat and pour in a quarter of the beaten eggs, tilting the pan to coat the surface with the uncooked egg.
Allow it to set a little before pushing and pulling the edges to move the uncooked egg around to help it cook evenly.
Sprinkle the top with a quarter of the cheese and ham and finish by cooking under the grill until golden brown in colour.
Remove from the grill and sprinkle with spring onion before repeating the process for the remaining omelettes. Serve immediately.
