Ham and Vegetable Fritatta

Preheat the oven to 180°C (160 fan) | 350°F | gas 4.
Fry the peppers and bacon in the oil for 10 minutes or until softened.
Lightly beat the eggs and stir in the peppers and bacon.
Pour the mixture into a non-stick cake tin and bake in the oven for 20 - 25 minutes or until just set in the centre.
Sprinkle with basil and serve warm or at room temperature.
