Pumpkin provides us with plenty of potassium. This mineral stimulates kidney and bladder activity and thus ensures gentle drainage in a natural way. This regulates the entire water balance of the body.
You would like to prepare this creamy vegetable soup without animal products? No problem! Simply use 2 tablespoons of light almond paste instead of the cream or leave it out altogether.
With a fruity balsamic vinegar the soup can be rounded off wonderfully.

- 22 ozs Pumpkin
- 3 ½ ozs starchy potatoes
- 1 small carrot
- 1 onion
- 1 garlic clove
- 2 Tbsps butter
- 2 cups Vegetable broth
- 1 Tbsp freshly grated ginger
- 3 ozs Whipped cream
- salt
- freshly ground peppers
- freshly grated Nutmeg
- Celery (for garnish)
Preparation steps
Peel the pumpkin, cut in half, scrape out the seeds and cut the pumpkin flesh into cubes.
Peel the potatoes and the carrot, and chop. Peel the onion and garlic, and chop finely. Heat butter in a pan and saute the onion and garlic in it until translucent. Add the pumpkin cubes and saute briefly. Pour the vegetable broth, add the potatoes, carrot and ginger, and simmer for about 25 minutes, stirring occasionally.
Puree the soup. Add the cream and, depending on the desired consistency, add some broth stir or let simmer a little. Season with salt, pepper and nutmeg. Serve in bowls and garnish with celery leaves.
