4 whole trout (ready to cook, about 250 grams)
salt

1 untreated lemon
4 sprigs rosemary
8 sprigs thyme
olive oil

Preparation steps

1.

Preheat the broiler or grill.

2.

Rinse the trout thoroughly and pat dry with paper towels.

3.

Season with salt inside and out.

4.

Season the inside and outside with pepper.

5.

Cut the lemon into thin slices.

6.

Place 2–3 pieces of lemon inside each fish.

7.

Put a sprig of rosemary and 2 sprigs of thyme in each fish.

Oil fish baskets for grilling and place the trout inside. Secure baskets and place on grill or under oven broiler (gas mark 2-3) on a baking sheet. Brush fish on both sides with a little oil and cook about 10 minutes. Then turn and cook on the other side for about 10 minutes more until done.  If you can easily pull out a fin, the fish is done, otherwise grill a little longer.

Take the fish out of the baskets and place on plates.

Serve with lemon wedges and garnish with fresh herbs.
