- 4 Swordfish fillet (each about 200 grams)
- lemons
- 2 Tbsps fennel seeds
- ½ tsp salt
- 2 garlic cloves (finely chopped)
- 150 grams butter
- 4 Anchovy fillet (soaked, drained and finely chopped)
- cayenne pepper
- 2 Tbsps Dill
- 1 Tbsp Lemon peel
- peppercorns
- Lemon wedge
- Dill

Preparation steps

Mix the lemon juice with fennel seeds, garlic and salt. Leave the fish in the marinade for about 30 minutes. Then pat the fish pat dry. Mix the butter and the anchovies into a paste and season with a pinch of cayenne pepper. Brush the fish with the little anchovy butter and form the remaining butter into rolls and chill in the refrigerator.

Cook the swordfish in a hot grill pan on each side for 3 minutes. Roll the butter in dill and lemon zest and cut into slices. Serve with the swordfish steaks. Sprinkle with pink pepper and garnish with lemon wedges and dill.
