Preparation steps

1.

Rinse and pat dry the grapefruits. Peel the zest of 1 grapefruit and remove remaining skin from both. Use a sharp knife to cut out the segments between separating membranes, then squeeze out all remaining juice in the grapefruit membranes. Finely chop the peeled grapefruit zest and ginger. Combine the chopped zest, ginger, and juice with the sugar.

2.

Rinse the beef, pat dry and cut into 12 thin slices. Season with salt and pepper and cook on the grill or under the broiler until desired doneness, watching carefully, approximately 1-3 minutes per side.

3.

Cut the basil leaves into thin strips and stir into the reserved grapefruit segments.

4.

Arrange the steaks on serving plates with the grapefruit segments. Spoon the grapefruit juice on top and garnish with extra basil. Serve immediately.
