1 clove garlic cloves (finely chopped)
4 Zucchini (sliced diagonally)
1 cup black Olives
lemon juice (from 1/2 a lemon)
mint (to garnish)
parsley (to garnish)

Preparation steps

1.
Mix the oil with the garlic and mix with the courgette slices in a large bowl.
2.
Heat a griddle pan until smoking then grill the courgette slices in batches until lightly browned.
3.
Mix the olives into the oil left in the bowl and add the lemon juice.
4.
Place the grilled courgettes on a serving plates, scatter over the olives and dressing, season with salt and freshly ground black pepper and garnish with the mint and parsley.
