Preparation steps

The day before, rinse the tomatoes and peel the onion. Finely dice, then season strongly with salt. Cover and let rest overnight. The next day drain the vegetables of any liquid released. Peel and finely grate the ginger. Rinse, trim, and chop the beans and peppers. Rinse, trim, and finely dice the chili.

Add all of the ingredients to a saucepan, and bring to a boil. Reduce the heat and simmer over low heat for 35 minutes, stirring occasionally. Fill the prepared jars with the chutney, seal tightly, and cool completely.
