150 milliliters White vinegar
40 grams dried Date
4 shallots
1 tsp mustard powder
1 tsp hot ground paprika
½ tsp ground Turmeric
½ tsp ground ginger
freshly ground peppers

Preparation steps

1.

Rinse the tomatoes, remove the core, and coarsely chop. Sprinkle with 1 teaspoon of salt and little of the sugar. Cover and let sit overnight.

Pass through a fine strainer and into a pot. Mix in the remaining sugar and vinegar. Stone the dates and finely chop. Peel and finely chop the shallots. Add the dates and shallots to the pot with the tomatoes. Simmer for 40 minutes, stirring occasionally.

3.

Add the mustard powder, paprika, turmeric, and ginger. Simmer an additional 10-15 minutes, until creamy, stirring occasionally. Season to taste with salt and pepper. Divide into prepared jars, and seal well.
