- 4 cups prepared Marinara sauce
- 2 Tbsps fresh, Italian parsley (finely chopped)
- 3 Tbsps fresh thyme (finely chopped)
- 5 cups Cheese tortellini (packaged)
- ½ cup freshly grated Parmesan
- 1 ¾ cups shredded Mozzarella

Preparation steps
1.
Preheat oven to 350ºF / 180ºC. Lightly coat an 11 x 7-inch / 28 x 18 cm baking dish with olive oil.

In a large bowl, whisk marinara sauce, parsley and thyme to blend.

Cook the tortellini in a large pot of boiling salted water until just tender, about 2 to 3 minutes. Drain well. Add the drained tortellini to the sauce mixture and toss to coat. Transfer the tortellini mixture to the prepared baking dish.
4.
Sprinkle Parmesan cheese and mozzarella cheese over the top. Cover with aluminum foil and bake for about 30 to 35 minutes, or until the cheese melts and the sauce bubbles.
5.
Let cool in the pan for about 5 minutes. Cut and serve.
