- 200 grams mixed Lettuce
- 1 Pear (such as Williams Christ)
- 40 grams Walnut
- 120 grams Roquefort cheese
- 3 Tbsps olive oil
- 2 Tbsps lemon juice
- 1 Tbsp White vinegar
- 1 generous pinch medium hot Mustard
- scallions (to taste)
- 1 pinch sugar
- salt
- freshly ground peppers
- Fresh herbs for garnish (to taste)
- Herb flower for garnish (to taste)
Preparation steps

Rinse and dry the lettuce, then tear into bite-sized pieces. Divide the lettuce onto plates or a platter. Rinse and quarter the pears. Remove the seeds and slice lengthwise. Top the lettuce with the walnuts and the pears. Crumble the blue cheese, and sprinkle over the salad. Garnish the salad with the herbs and herb flowers.

For the vinaigrette, mix the lemon juice, mustard, sugar, and the oil. Season to taste with salt and pepper, and stir in the chives. Drizzle the dressing over the salad, and serve.
