Preparation steps

Preheat the oven to 180°C | 350F | gas 4. Line a spring form pan with baking paper.

Wash, sort, clean and gently pat the gooseberries dry.

Beat the butter with the sugar until creamy. Gradually add the eggs with a pinch of salt. Stirring well between each addition.

Mix the flour with the almonds and the baking powder. Stir in the milk and the flour mixture alternately. Pour the batter into the spring form pan distributing it evenly.

Sprinkle the gooseberries with some flour and place them on top of the better. Bake for 35 minutes in the preheated oven.

Mix the eggs whites with the lemon juice. Beat until stiff. Continue beating while gradually adding the sugar until the meringue is stiff and shiny and the sugar is incorporated.

Remove the cake from the oven. Spread the meringue evenly over the top and continue baking for another 10-15 minutes. Remove the cake. Cool briefly and remove the cake from the pan. Cool completely. Slice and serve.
