4 sesame Burger buns (halved)
2 Avocados (pits removed and sliced thinly)
1 Tbsp lemon juice
salt

1 tsp espelette pepper
1 cup dried breadcrumbs
2 small eggs
1 Tbsp Chives (finely chopped)
1 Tbsp parsley (finely chopped)
½ cup Buffalo mozzarella (sliced thinly)
bay leaves (to garnish)

Preparation steps

1.
Pre-heat the grill to hot. Pre-heat the oven to 200°C | 400F | gas 6.

In a large mixing bowl, combine the ground chicken, eggs, breadcrumbs, chopped herbs, ½ tsp of the dried Espelette pepper flakes and some seasoning. Mix using your hands until combined thoroughly.

Dress the avocado with lemon juice and set to one side.
4.
Make patties with the chicken mixture using 2 large tablespoons of the mixture for each patty; roll between your palms to form a ball then flatten until you have the right shape. Transfer to a lined baking tray and bake for 15 minutes.

Meanwhile, toast the sesame seed buns until golden brown.

Remove the patties after 15 minutes and finish under the grill until golden brown on both sides.
7.
Arrange the burgers by placing slices of avocado on the bottom half of the burgers. Top with slices of the mozzarella.
8.
Place a patty on top and then more avocado and a final slice of mozzarella. Return to the grill for 1 minute to melt the cheese a little. Remove and transfer to serving plates.
9.
Garnish the tops with a few rocket leaves, the remaining pepper flakes and the top half of the buns. Serve immediately.
