2 cloves garlic cloves (finely chopped)
2 tsps Sea salt
3 Tbsps olive oil
1 lemon (finely grated zest and juice)
1 Tbsp finely chopped mint
25 ozs lean, boneless Lamb shoulder (cut into chunks)

4 soft, white Pita bread

Preparation steps

1.
Pound the garlic and salt in a pestle and mortar (or food processor) to a paste.

Whisk together the oil, lemon juice, zest, mint and garlic paste. Add the lamb and toss well. Cover and chill for at least 2 hours.
3.
Heat a frying pan and cook the souvlaki for 2-3 minutes on each side, basting with the remaining marinade.
4.
Heat the pita breads, split open and add the souvlaki. Sprinkle with mint, coriander and chopped spring onions.
