- For the pears
- ⅞ cup dry white wine
- 1 Vanilla bean (split)
- 2 Tbsps honey
- 2 Pear (cored and cut into wedges)
- For the rösti
- 3 cups waxy potatoes (grated)
- Nutmeg (freshly grated)
- vegetable oil (for frying)
- 1.333 cups Gorgonzola (cut into pieces)
Preparation steps

Preheat the oven to 180°C (160°C in a fan oven), 350°F, gas 4.

Bring the wine to the boil with the vanilla pod and honey. Add the pear wedges, bring to the boil, remove from the heat and leave to cool.

For the rösti, mix the potatoes with salt and nutmeg. Transfer small mounds, in batches, to a non-stick pan of hot oil. Press flat and fry on both sides for 2-3 minutes per side until crispy and golden brown. Drain on kitchen paper. Cook around 24 small rösti in this way, and keep warm in the oven.

Put a chunk of Gorgonzola between each pair of rösti and arrange on plates. Take the pears out of the cooking liquor, drain and add to the plates. Serve garnished with rosemary and figs.
