75 milliliters milk
75 grams butter
3 eggs
100 grams Spelt flour
1 generous pinch Baking powder
250 grams Dark chocolate
175 milliliters Whipped cream

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Coarsely chop half the penuts and mix with the oats, spelt flakes, and the sugar in a mixing bowl. Heat the peanut butter with the milk and room temperature butter. Add the eggs to the bowl, and mix everything strongly with a hand mixer. Mix in the flour and baking powder, and fold until combined. Add the reserved nuts, and mix well.

Spread the batter on a baking sheet lined with parchment paper. The batter should be in an even layer about 1.5 cm (approximately 1/2 inch) thick. Bake for 25-30 minutes, until golden brown. Remove from the oven, and cool on a wire rack.

Chop the chocolate. Bring the cream to a boil, add the chocolate, and let rest for 1 minute. Mix the cream mixture with a spatula, until a smooth ganache has formed. Spread the ganache over the coold granola, and score the top to form square pieces. Garnish wht squares with a pretzel. Let the ganache cool for 1 hour, then cut into pieces and serve.
