- For the pears
- ⅛ cup Pear brandy
- 1 organic lemon (juiced and zest removed)
- 2 cloves
- 2 Tbsps honey
- 1 Vanilla bean (slit open lengthways)
- 4 Pear (cored and cut into wedges)
- For the cream
- ⅞ cup Mascarpone
- 1 pinch Vanilla bean
- 2 Tbsps honey
- ⅜ cup cream (whipped)
- 1 tsp fresh Lemon balm (chopped)
- Lemon balm (to garnish)
- 1 handful Blueberries

Preparation steps
1.
Place the pear schnapps in a pot with 250 ml water. Add the lemon zest and juice, cloves, honey and the vanilla pod. Bring to the boil then add the pears and remove from the heat. Leave to cool, stirring occasionally.
2.
To make the cream, mix together the mascarpone, vanilla seeds and the honey. Stir in the cream and the lemon balm.
3.
Arrange the cream and the pears on plates and serve garnished with the lemon balm and blueberries.
