- ¼ cup unsalted butter
- 1 ¼ cups Pancetta (cut into 1cm thin lardons)
- 6 ½ cups waxy potatoes (peeled and sliced to 3mm thickness)
- 1 ⅓ cups Reblochon cheese (rind removed and cubed)
- 2 ½ cups double cream

Preparation steps
1.
Pre-heat the oven to 150°C | 300F | gas 2.
2.
Grease a 30cm x 10cm ceramic, rectangular baking dish with half of the butter.
3.
Heat a large frying pan over a medium-high heat and fry the pancetta for 4-5 minutes until golden. Drain on kitchen paper.
4.
Toss the slices of potato with salt and pepper and layer half into the baking dish.
5.
Sprinkle half of the pancetta on top and half of the cheese and season. Layer the remaining potatoes on top and then the remaining pancetta.
6.
Pour the cream on top over the potatoes so that it sinks in and barely covers the surface.
7.
Bake for 75 minutes, then remove and dot the remaining cheese on the surface.
8.
Return to the oven for further 15 minutes until golden brown and bubbling. Remove and allow to sit for 5 minutes before serving.
