2 large onions (diced)
2 cloves garlic cloves (diced)
2 Tbsps butter
1 chicken (approx. 1.2 kg, cut into 8 pieces)
3 fresh bay leaves
cup dry white wine
4 Tomatoes (skinned and chopped)
1 cup chicken stock
4 fresh Prawn
1 Tbsp parsley (chopped)

Preparation steps

1.
Fry the onion and the garlic in hot butter and add the chicken bits. Fry until golden brown. Season with salt and ground black pepper, add the bay leaves and deglaze with the wine.
2.
Add the tomatoes and the stock. Cover and braise for around 30 minutes.
3.
Add the prawns for the final 5-10 minutes of cooking time along with the parsley. Season with salt and ground black pepper and serve.
