Preparation steps

For the caramel: Combine the honey, sugar and water in a small saucepan over medium heat and cook for about 10-15 minutes, until a light yellow caramel. Pour onto a baking sheet lined with parchment paper, cover with another sheet of parchment paper and roll out thinly with a rolling pin. Let cool and solidify then remove the parchment paper and break into chunks.

To serve: Slice the goat cheese. Rinse the berries and pat dry. Arrange the cheese, caramel pieces and berries on a serving plate and garnish with mint leaves, if desired.
