- salt
- ½ tsp ground Turmeric
- 1 shallot
- 1 garlic clove
- 2 carrots
- 1 red Bell pepper
- 1 Lime
- 2 Tbsps olive oil
- peppers
- 1 oz Goat cheese
- 1 egg
- 2 Tbsps Spelt flour
- 2 ozs ground almonds
- ¼ bunch Basil
Preparation steps
Cook the rice in 8 ounces boiling salted water with turmeric for 16-18 minutes at low heat. Then remove from the heat and leave to simmer.
Meanwhile peel and chop the shallot and garlic. Clean and wash the carrots and peppers and cut both into strips. Rinse lime, dry, grate peel, squeeze juice.
Heat 1 tablespoon of oil in a frying pan. Sauté the shallot and garlic over a medium heat for 2 minutes. Add carrot and pepper strips and steam for 5-7 minutes. Add rice and fry for 2 minutes. Deglaze rice pan with lime juice, add 3 tablespoons of water and season to taste with salt, pepper and lime zest.
While the vegetables are cooking, prepare the goat's cheese. Beat the egg in a shallow bowl, put flour with a little salt and pepper on a plate and put almonds on another plate. Form goat cheese into 4 medallions Dredge the goat cheese discs in the flour, then in the egg and finally press it into the almonds.
Heat the remaining oil in a frying pan. Fry the goat's cheese discs on both sides at medium heat for 7-8 minutes until golden brown. Wash basil, shake dry, and chop. Arrange the goat cheese on the rice and sprinkle with basil.
