- 300 grams Gnocchi
- salt
- 2 Zucchini
- 2 Red Bell pepper
- 2 shallots
- 1 bunch Basil
- 6 sm cans olive oil
- 2 garlic cloves
- 2 Tbsps mild Fruit Vinegar
- 4 Tbsps Vegetable broth
- 2 Tbsps Tomato paste
- freshly ground pepper

Preparation steps
1.
Cook gnocchi according to package instructions in boiling salted water until al dente. Drain and rinse in cold water, drain well.

Rinse, trim and slice zucchini. Rinse and halve bell peppers, remove seeds and ribs and dice nito small cubes. Peel and finely dice shallots. Heat 2 tablespoons of oil in a pan and saute prepared vegetables for about 3-4 minutes on low heat.

Rinse basil, shake dry and pluck off leaves. Combine gnocchi with vegetables and basil leaves.
4.
Peel garlic and squeeze through a garlic press. Whisk vinegar with broth, tomato paste, garlic and remaining oil, season well with salt and pepper. Toss salad with the dressing and serve.
