- 800 grams potatoes (starchy)
- 120 grams Pastry flour
- 40 grams Parmesan
- 2 eggs
- 300 grams canned Tomatoes
- 4 Mozzarella
- 4 Tbsps olive oil
- 1 Tbsp oregano (chopped)
- 1 Tbsp Basil (chopped)
- 1 garlic clove (finely chopped)
- 1 pinch sugar
- salt
- freshly ground peppers
- Nutmeg (freshly grated)
- Basil (for garnishing)
Preparation steps
Peel potatoes and cook in salted water until tender. Press while hot through a potato ricer and mix with flour, Parmesan and eggs. Season with salt, pepper and nutmeg. Knead into smooth dough.
Shape into about 3 cm thick rolls (approximately 1 1/4 inch) and cut into about 3 cm (approximately 1 1/4 inch) wide pieces. Make pattern with a fork on all pieces. Cook in plenty of salted water for about 5 minutes or until they float up to the surface.
Mix tomatoes with garlic and herbs. Season well with salt and pepper.
Cut mozzarella into slices.
Remove gnocchi with a slotted spoon and drain well. Arrange gnocchi in four large ramekins. Drizzle with oil and add tomato sauce. Top with mozzarella slices and bake in preheated oven at 200°C (approximately 400°F) for about 15-20 minutes.
Garnish with basil and serve.
