- For the macaroons
- 4 large egg whites
- 3 cups powdered sugar
- pink Food coloring
- 1 cup Almond flour
- For the filling
- 1 Tbsp cream (40% fat)
- 1 Tbsp Vanilla liqueur
- 2 ½ cups powdered sugar

Preparation steps
1.
For the macaroons: heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.
2.
Whisk the egg whites in a mixing bowl until soft peaks form. Gradually whisk in the icing sugar.

Add a few drops of colouring with the final addition of sugar. Keep whisking until the mixture is light pink, thick and glossy.

Gently fold in the ground almonds.
5.
Spoon 40 rounds onto the baking trays, each about 5 cm| 2" wide. Leave to stand for about 10 minutes until a skin starts to form.

Place the baking trays in the oven, leaving the oven door slightly ajar to allow steam to escape, then bake for 20-25 minutes until just crisp, but not browned. Leave to cool.
7.
For the filling: beat the cream with the vanilla liqueur and sift in the icing sugar, beating until smooth and thick.
8.
Spread on half the macaroons and place another macaroon on top.
