Glazed Spiced Cookies with Amaretto and Apricot
Mix flour, baking powder, sugar, salt and spices in a bowl. Whisk egg, amaretto and milk in a bowl and mix into flour mixture with almonds. Dice 4 apricots very finely, then fold into dough. Knead with dough hook of mixer until dough is smooth. Wrap dough in plastic wrap and refrigerate for about 20-30 minutes, until well-chilled.
Place dough between sheets of parchment paper and roll out in a thin layer, about 1 cm (approximately 1/3 inch) thick. Cut out circles with a round cookie cutter, about 3 cm (approximately 1 inch) diameter. Place cookies on a baking sheet lined with parchment paper. Bake in preheated oven at 200°C (fan: 180°C, gas mark 3-4) (approximately 400°F), about 15 minutes. Cool cookies on a wire rack.
Chop apricots finely. Mix powdered sugar and lemon juice into a thick icing and brush over cookies. Garnish with apricots. Let icing dry. To serve, arrange cookies on a plate.
