175 grams honey
2 eggs
175 grams cane sugar
1 lemon (zested and juiced)
400 grams Pastry flour
1 packet Baking powder
1 tsp cinnamon
½ tsp Ground clove
1 tsp ground cilantro
powdered sugar (for sheet metal)
Wafer (8 cm diameter)
almonds (halved and peeled)
red Maraschino cherry (halved)
4 Tbsps powdered sugar
2 Tbsps lukewarm water

Preparation steps

1.

Beat eggs with sugar until fluffy. Add lemon zest and juice to egg mixture, continue beating until thickened and stir in honey. Mix flour, baking powder, cinnamon, cloves and coriander and fold into egg mixture. Let dough rest briefly. Spread dough onto wafer papers with a warm knife.

Set gingerbread circles on a baking sheet, dust with powdered sugar and let stand overnight in a cool, dry place.

Preheat oven to 150°C (approximately 300°F). Decorate gingerbread circles with almond halves and cherries and bake about 25 minutes. For the glaze, mix powdered sugar and water and spread over gingerbread circles while still hot. Glaze should appear transparent and slightly milky. Let glaze set before serving.
