- For the cake
- 1 cup unsalted butter
- 1 cup caster sugar
- 4 eggs
- 2 unwaxed lemons (finely grated zest)
- 2 cups self-rising flour
- For the icing
- 1 ¾ cups powdered sugar
- 1 Tbsp lemon juice
- 1 Tbsp Poppy seeds

Preparation steps
1.
For the cake: heat the oven to 180°C (160° fan) 350°F gas 4. Grease an 8cm x 21cm|3" x 8.5" loaf tin and line the base with non-stick baking paper.

Beat the butter and sugar in a mixing bowl until light and creamy.

Beat in the eggs, one at a time, until blended. Beat in the lemon zest.

Sift in the flour and stir until combined.

Spoon into the tin and bake for 40-50 minutes. A skewer inserted into the centre of the cake should come out clean. Cool in the tin for a few minutes then place on a wire rack to cool completely.
6.
For the icing: sift the icing sugar into a bowl and beat in the lemon juice until smooth and thick. Spoon over the top of the cake, allowing it to run down the sides and sprinkle with poppy seeds. Leave to set.
