- For the biscuits
- 1 cup unsalted butter
- 1 cup powdered sugar
- 3 cups all-purpose flour
- 1 pinch salt
- 1 egg white (lightly beaten)
- ¼ cup caster sugar
- For the filling
- 4 cups mixed Berry (e. g. raspberries, blueberries)
- ½ cup sugar
- 2 Tbsps Corn starch
- To decorate
- whole Berry

Preparation steps
1.
For the biscuits: heat the oven to 180°C (160° fan) 350°F gas 4. Line a baking tray with non-stick baking paper.
2.
Beat together the butter and icing sugar in a mixing bowl until creamy.
3.
Add the flour and salt and work together to form a stiff dough, then knead lightly for a few moments until smooth.

Pat or roll out the dough into a circle, with a thickness of about 1 cm| 3/8". Cut into 8 wedges. Brush with the egg white and sprinkle with the caster sugar.

Place on the baking tray and bake for 12-15 minutes until pale golden. Cool the biscuits for a few minutes on the tray, then place on a wire rack to cool completely.
6.
For the filling: heat the oven to 180°C (160° fan) 350°F gas 4. Grease a baking dish.
7.
Mix the berries, sugar and cornflour and put into the baking dish. Cook for 25-30 minutes until the berries are soft. Leave to cool.
8.
Place the biscuits on top of the dish and decorate with whole berries. Serve with vanilla ice cream.
