Preparation steps

Cut the butter into pieces and heat in a saucepan with the honey and sugar. Continue to stir while heating until the sugar has dissolved. Place in a large mixing bowl and let cool. When cooled, add the almonds, 400 grams (approximately 14 ounces) flour, the spices and the egg and thoroughly knead with a hand mixer (dough hook). You may need to add a little more flour. Mix the baking soda with the rum in a small bowl until smooth. Put the baking soda mixture into the dough and continue kneading until the dough shines and is no longer sticky.

Cover the bowl with plastic wrap and let rest in the refrigerator overnight.

Preheat the oven to 180°C convection (approximately 350°F).

Line a baking sheet with parchment paper. Roll out the dough on a floured surface and cut out gingerbread men. Press into the dough to make faces, loops and buttons. Place the gingerbread men on the baking sheet and bake for 15-20 minutes, then carefully remove from baking sheet. Cool on a wire rack.

For decorating: Mix the powdered sugar with lemon juice until smooth and thick. Use a small piping bag to decorate as desired. Allow to dry before serving.
