Gingerbread Men

- 50 grams golden raisin
- 125 grams Hazelnuts
- 225 grams butter
- 225 grams sugar
- 1 egg
- 300 grams Molasses
- 2 ¼ tsps Ground cinnamon
- 2 tsps ground ginger
- 1 tsp ground allspice
- 1 tsp Baking powder
- ¼ tsp salt
- 350 grams Pastry flour
- Pastry flour (to work)
Preparation steps
Finely chop the raisins. Finely grind the hazelnuts. Beat the butter and sugar until fluffy. Stir in the egg. Gradually stir in the molasses, cinnamon, ginger, allspice, baking powder, salt, flour, hazelnuts and raisins. Knead into a smooth dough. Divide the dough into four portions, form into patties, wrap in plastic and chill for about 3 hours.
Roll the dough out on a floured surface until about 3 mm (approximately 1/4 inch) thick. Use cookie cutters to cut out figures. Cut out clothes, if desired. Place the cookies on a lined baking sheet and chill for about 20 minutes.
Preheat the oven to 190°C (approximately 350°F).
Bake the cookies for 10-15 minutes, watching closely to prevent burning.
Remove from the oven and let cool for about 5 minutes. Allow to cool completely on a wire rack. Decorate as desired and serve.
