- For the cupcakes
- 1 ½ cups all-purpose flour
- ½ cup light brown sugar
- ⅜ cup sunflower oil
- ½ tsp Ginger powder
- 1 tsp Baking powder
- ½ tsp ground cinnamon
- ½ tsp Mixed spice
- ¼ tsp baking soda
- 1 pinch salt
- 0.1 cup black Molasses (molasses)
- ½ cup Ginger beer
- For the buttercream
- ⅔ cup unsalted butter
- 2 ½ cups powdered sugar
- 1 tsp vanilla extract

Preparation steps
1.
For the cupcakes: heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in 12-15 bun tins.
2.
Put all the ingredients in a mixing bowl and whisk with an electric whisk until smooth.
3.
Spoon into the paper cases and bake for about 15 minutes until risen and a skewer or cocktail stick inserted into the centre comes out clean. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.
4.
For the buttercream: beat the butter until soft. Sift in the icing sugar and beat until smooth. Stir in the vanilla.
5.
Spoon on top of the cakes.
