- 8 garlic cloves
- 3 Tbsps butter
- 2 Tbsps Pastry flour
- Beef broth
- 4 Red mullet fillets (skin-on)

- 30 grams butter
- 100 grams Sour cream
- lemon juice
- Nutmeg
- Garlic Scapes (to sprinkle)

Preparation steps

For the garlic soup: Peel the onion and garlic, chop the onion finely and halve the garlic. Sweat the onions in 2 tablespoons hot butter until translucent, mix in the garlic and sprinkle with the flour. Deglaze with the broth and simmer, stirring occasionally, for about 15 minutes.

Meanwhile, for the fish: Rinse the fish, pat dry, season with salt and pepper and sear, skin-side down, in a pan with hot oil for about 2 minutes. Flip over, remove the pan from the heat, add the chopped butter and baste until cooked to your liking. Add the sour cream to the soup and purée. Season with lemon juice, salt, pepper and nutmeg and distribute among warm soup bowls. Sprinkle with garlic flowers and serve with 1 halved fish fillet.
