1 head Cauliflower (rinsed and trimmed)
2 cloves garlic cloves (peeled and coarsely minced)
1 Tbsp lemon juice
good-quality olive oil
coarse salt (to taste)
freshly ground Black pepper (to taste)
freshly grated Parmesan (for sprinkling)

Preparation steps

Preheat oven to 400°F.

Cut cauliflower into florets and put in a single layer in an oven-proof baking dish. Toss in the garlic. Sprinkle lemon juice over cauliflower and drizzle with olive oil and toss to coat. Sprinkle with salt and pepper.

Bake uncovered for 25 to 30 minutes, or until the top is golden and the cauliflower is tender when pierced with the tines of a fork. Remove from oven and sprinkle generously with Parmesan cheese. Serve hot.
