- 6 cups fresh Cauliflower (florets)
- ¼ cup good-quality olive oil
- 2 cloves garlic cloves (peeled and minced)
- 2 Tbsps lemon juice
- salt (to taste)
- freshly ground Black pepper (to taste)
- ¼ cup grated Parmesan
Preparation steps

Preheat the oven to 450º F / 230º C.

Place the cauliflower florets in a large roasting pan. Drizzle olive oil over the cauliflower, and season with the garlic, lemon juice, salt and pepper.

Cook for 18 minutes, stirring occasionally to ensure even roasting. Remove from the oven and sprinkle with the Parmesan. Serve immediately while still warm.
